Cajun, Shoe String Potatoes

If your looking for a new way to serve potatoes, This is it. It tastes great, and is real easy to make. .

This recipe will only serve 4 people, so if you need to make them for a larger group, it would be easy to place in a sheet pan, jelly roll pan, and cook them in the oven for about 30 minutes at 350 degrees.

Although I used "Red" potatoes here, Baking potatoes would have worked just as well. You just need a potato that will hold it's form after being cooked.

  • 4 Medium Red Potatoes, julienned
  • 1 Medium Onion, sliced real thin
  • 1/2 Tablespoon Kosher Salt
  • 1 Teaspoon Ground Black Pepper
  • 1 Tablespoon Butt Kickin' Blacken, Original Recipe
  • 2 Tablespoons Butter
  • 2 Tablespoons Vegetable Oil

1. Cut the potatoes into 1/8" x 1/8" strips I used a mandolin. Add the sliced onion, and spices, then mix it up with your hand.

2. Melt the butter in a Teflon pan over low heat, then add the oil. Add the potato mixture to the pan, being sure that it's not more than about 1 1/3" thick. Cover and cook on low for 15 minutes.
3. Flip them over, by placing a plate on top, then flipping. Slide the potatoes back into the pot so the other side can cook. Cover, and cook another 15 minutes.

4. To serve: You can either slide the whole thing onto a plate, or cut in wedges right in the pan.
