Venison Spaghetti Sauce

I've been given 2 pounds of ground venison, and in trying to do something a little different with it, I made Venison Meatballs, and Venison Spaghetti Sauce with it.

This sauce was Soooo Good, it warranted eating by itself. Of course I really like a meat sauce with pasta, as I'm really a carnivore at heart.

Now, you know I was able to use my Italian Seasoning Blend along with my Original Recipe for good flavor, plus a little bit of heat. Try it, I know you'll love this one as much as I did.



1. Brown the meat in the pot you'll be cooking the sauce in. Set the temperature to high, add the oil, then the meat. Break up the meat while its cooking. When it's done, remove the meat to a bowl.

2. Turn the heat down to medium, add more oil, if necessary, then add the onions. Cover and cook until the onions are real soft.
3. Add the tomato sauce, and the rest of the spices, and mix well. Turn the burner to high and bring the mixture to a boil.

4. Once it's boiling, turn it down to a simmer, and put the lid on, but leave an edge open, too allow the steam to escape. This will let the sauce reduce, so it won't be too runny on your plate. Let this simmer, wiht the lid cracked for about 1 hour for all of the flavors to blend, and let the sauce thicken up. I made Venison Meatballs at the same time, and Poached them in the sauce.

Store any leftovers in the refrigerator for up to a few days, Or, you can freeze this for another easy weekday meal.

To Re-Heat: Just set it in a pot, over low heat, with the lid on while you're cooking the pasta.
