Bacon Wrapped Bananas

Every October this recipe makes it's way into my top three hits for the month. I can't figure why, other than the fact that it's football season, and people are looking for some great party food for the games.

I saw something similar to this on TV the other night, and couldn't wait to try it. Knowing how everyone loves bacon, and bananas separately, I really was curious to see how they would work together. Using the thick bacon, and the sugar and blacken mixture, really gives it some great flavor.

As good as these are, don't serve anyone too many of them because, they're quite rich.

When you read the recipe below, you'll note that I cook these in a Teflon coated fry pan. However, they really would be much better if you're able to cook them on a grill. Especially so if it's got a little smoke going with it.





1. Cut slice of banana that are equal to the width of the bacon. Wrap the bacon around the banana in one layer only, and secure with a toothpick.


2. Mix up the sugar and blacken, making the "rub", set it aside 'till later.


3. Heat a Teflon Fry pan to medium / high heat, add the oil, and then the bacon wrapped bananas. Cook, turning frequently until the bacon is about 3/4 done. Add the rub, being sure to coat all the pieces well. The sugar will melt and caramelize, while coating the bananas. Serve immediately.


4. If you've got a grill going, these would be perfect if cooked on the grill. Just be sure to soak the toothpicks before you put these hors d'oeuvres together to keep them from burning.
