I grew up in an area that was an ethnic melting pot. I didn’t realize it at the time, but tasting the true flavors of all of those foods was an important experience.

Im a self-taught chef, and have learned the slow way, over the past 30 years or so. Part of my cooking has always been trying to take standard everyday foods, and take them to a new level.

It seems that I've attained that goal and then some, as explained by the fact that I keep getting more and more opportunities to cook outside my own galley. So much, in fact, that, after much urging, I've decided to do it for real.
